While the recipe for this super moist and more-ish orange and almond cake needs a tiny bit of planning ahead in that you need to boil the oranges for a couple of hours, it’s actually one of the easiest cakes to make. And one of the most delicious.
- 2 oranges
- 250 g caster sugar
- 6 eggs
- 250 g almond meal
- 1 tbspn baking powder
- icing sugar, for dusting
1. Well before you plan to cook the cake, begin by boiling two whole oranges for two hours. Allow them to cool, then blitz them in a food processor to get a puree. (Blitz them whole, skin and all).
2. Heat the oven to 160 C. Grease and line a 20 cm springform cake pan.
3. Beat the eggs and caster sugar with an electric mixer until it’s pale and fluffy and you can detect no more graininess of the sugar. Stir in the pureed oranges, then the almond meal and baking powder. Pour into greased and lined baking pan and cook for one hour, or until a skewer inserted into the centre comes out clean. Allow to cool in the pan. Dust with icing sugar just before serving.
